Pork tenderloin with radicchio

Ingredients for 4 people
  • 400 g pork tenderloin
  • 2 heads of radicchio
  • 1 clove of garlic
  • stale bread (1-2 days old)
  • extra virgin olive oil
Preparation
  • Brown the pork fillet in a little olive oil, put it in a baking dish covered with coarse salt and bake for 10 minutes at 180°C.
  • Remove it from oven and clean away all the salt.
  • Cut the radicchio into thin strips and cook with a knob of butter.
  • Separately, sauté the garlic and crumbled stale bread with a little extra-virgin olive oil until golden.
  • Serve the fillet with the radicchio sprinkled with the toasted bread crumbs.
