Pork tenderloin with radicchio
Ingredients for 4 people
- 400 g pork tenderloin
- 2 heads of radicchio
- 1 clove of garlic
- stale bread (1-2 days old)
- extra virgin olive oil
Preparation
- Brown the pork fillet in a little olive oil, put it in a baking dish covered with coarse salt and bake for 10 minutes at 180°C.
- Remove it from oven and clean away all the salt.
- Cut the radicchio into thin strips and cook with a knob of butter.
- Separately, sauté the garlic and crumbled stale bread with a little extra-virgin olive oil until golden.
- Serve the fillet with the radicchio sprinkled with the toasted bread crumbs.
